Peter MacCann

GENERAL MANAGER

Having begun my career in England with Forte Hotel Group, I have been the General Manager of The Merrion since its inception. With years of experience behind me, working in Sheen Falls Lodge, Kenmare and Conrad International Hotel, Dublin, I couldn’t resist the opportunity to be involved in the opening of this 5-star luxury hotel in 1997. Understanding the hotel industry and what is entailed in creating the luxury experience, I, along with my team, have helped The Merrion, remain one of the top hotels in Dublin.

Tracy Glassett

Executive Housekeeper

I have has been part of the Merrion family for twenty years. Originally from Dublin, I have had an international career, working for many years in the Luxury Cruise business. The Merrion was the perfect opportunity for me to continue my career on land, it has provided me with the opportunity to grow professionally in an exciting and beautiful property. I am privileged every day to work with a wonderful team of House keepers, they are first class and we constantly strive to be the best in the business and to set exceptional Housekeeping standards which untimely will exceed our Guests expectations.

Our job is to create a sense of home for our guests and ensure they have a wonderful experience. I pride myself on having an eye for the finer details and working at the Merrion has given me an opportunity to work alongside the finest Irish fashion and Interior designers. The opportunity for creative development as well as business development is excellent here. My days here are full and varied but when I finish each day I always feel a great sense of achievement.

Ruthie McGrath

Director of Sales

When I took up my  role as Director of Sales in 2016, I returned to my native Ireland having established my career in North America where I held progressive roles at hotels in Boston and New York. Bringing Sales experience and Operational knowledge, I oversee the hotel’s Sales and Events team at The Merrion.

I also manage the hotel’s key accounts including Virtuoso, American Express Fine Hotels & Resorts, Signature, Traveller Made and support The Merrion’s long-standing relationship with The Leading Hotels of the World.

Representing the hotel abroad, building relationships with new and existing long standing clients is the core of my daily role.

I take immense pride in my work at The Merrion and am hugely proud of what Dublin and the team at the hotel have to offer.
I am graduate of Shannon College of Hotel Management while holding a Bachelor’s Degree in Hotel Management and a Diploma in Event Management.

 

Ed Cooney

Head Chef

Responsible for the cuisine served throughout The Merrion Hotel from its 2 restaurants to Private Dining Rooms, Drawing Rooms and Room Service. I began my career at the Rockwell Hotel School in County Tipperary, before spending the early part of my career gaining experience at some of Scotland and England’s finest hotels and restaurants’. From Executive Chef at the Craigendarroch Hotel & Country Club, Royal Deeside to The Regent Four Seasons London now known as The Landmark Hotel as Executive Sous Chef. For the last 20 years, I has embraced my role as Executive Chef at The Merrion and has been delighted to accept numerous awards including the Best Hotel Restaurant in Ireland 2016 in the Irish Restaurant Awards, while continually holding 2 AA Rosettes for the last 15 years.
